Buttermilk Pancakes

To make pancakes to serve 2 people, you will need 125g plain flour, 1 tbsp sugar, 1/4 tsp salt, 1/4 tsp baking powder, 1/4 tsp baking soda, 240ml buttermilk, 1 egg, 20g butter. 

In a bowl, add the flour, sugar, salt, baking powder, and baking soda, and whisk to combine. In another bowl, whisk the buttermilk, eggs, and melted butter until smooth. Add the buttermilk mixture to the dry ingredients, gently incorporating with a spatula. Make sure not to overmix, as that will result in dense pancakes.

Add the butter to a pan over medium-low heat. Once the butter begins to bubble, add ⅓ cup (80 ml) of batter to the pan. Cook until the top side starts to bubble and the bottom is golden brown. Flip the pancake and cook until the underside is golden brown. Repeat with the remaining batter. 

Serve your pancakes either with blueberries & syrup or caramelised banana & pecans for the true D&M style buttermilk pancakes.

The Full Works & The Veggie Works

For the full works, you will need fresh eggs, bacon, sausages, black pudding, baked beans, mushrooms & grilled tomatoes to cook to create our full works. For the full veggie works, you will need fresh eggs, baked beans, buttered spinach, mushrooms, avocado, grilled tomatoes & hash browns

It is easiest to scramble your eggs. To make scrambled eggs, you need to whisk the eggs together in a bowl and pour into a hot frying pan and mix until all cooked. If you want something more challenging, you can have a go at poaching your eggs. To poach your egg, you need to break your egg in a bowl first. Bring to simmer a pan of water. Stir the water to create a whirlpool. Slowly tip your egg into the centre—Cook for 3-4 mins. The water should be low temperature to prevent the egg from going everywhere. When ready, lift out with a slotted spoon. 

The bacon, sausages, black pudding, mushrooms and grilled tomatoes can be easily cooked in the oven. Check instructions for cooking times for the bacon, sausages & black pudding. The mushrooms & grilled tomatoes only need 6-8 minutes. 

For the spinach, melt some butter in a pan, add some garlic. Once softened add the spinach. Cook for a couple of minutes turning consistently with tongs until wilted. Add some more butter and then serve. 

For the hash browns, peel and boil 3 medium-sized potatoes for 10 minutes. Drain and cool. Then coarsely grate into a bowl with 25g of melted butter. Mix well and divide into 8 patties. Heat 4 tbsp of oil in a frying pan and gently fry the hash browns in batches. 4-5 minutes on each side. 

For the baked beans, cook in the microwave as per the cooking instructions on the packet.

To make a Bloody Mary; 

Bloody Mary mix – 100ml tomato juice, 1 pinch of sea salt, 1 pinch of black pepper, 2 dashes of tabasco, 3 dashes of Worcester sauce, 10ml lemon juice 

Mix together and pour into a jug with vodka and plenty of ice. Pour the mix into glasses garnished with celery, lemon slice. Add black pepper on top and serve with a paper straw. Enjoy!
